Did you know that you don’t actually need an ice cream maker to make your own ice cream right at home?

Yep, that’s right. This no-churn Toasted Marshmallow Ice Cream is made entirely from scratch, using just three ingredients…and all you need is a mixing bowl and an electric mixer.

This recipe starts with my trusty ice cream base made with heavy whipping cream and sweetened condensed milk. That mixture is packed full of toasted marshmallows, then frozen into the sweetest, creamiest, richest, most irresistible ice cream.

Why You’ll Love Toasted Marshmallow Ice Cream

  • Three ingredients. We’ve got a simple base made of heavy whipping cream and sweetened condensed milk plus the addition of toasted marshmallows. That’s it!
  • No churn. No specialty equipment needed for this recipe. You probably have all the tools you need on hand already.
  • Easy prep. The hardest part is waiting for the ice cream to freeze!

Ingredients

The full printable recipe card with measurements and instructions is found at the bottom of the post.

  • Whipping Cream: Heavy whipping cream is whipped to soft peaks to create a light and fluffy ice cream.
  • Sweetened Condensed Milk: Sweetened condensed milk adds the perfect amount of sweetness and creates a velvety, creamy texture.
  • Marshmallows: I recommend mini marshmallows. If all you have are regular-sized marshmallows, chop them into smaller pieces before adding them into the ice cream base.

Recipe Tips and Tricks

  • Don’t burn the marshmallows! They cook super fast under the broiler, so keep a close eye on them so as not to char them. Mine were done in about a minute.
  • Leave plenty of time for freezing. For the best results, make sure that you give your ice cream a minimum of 8 hours to freeze.
  • When you’re ready to serve, set the container out on the counter for about 10 minutes. This gives the ice cream a little bit of time to soften up for ultimate creaminess!
  • Store in the back of the freezer. The back of the freezer is more consistently cold, while the front of the freezer is affected a little bit more by the door opening and closing. Storing your ice cream in the back of the freezer keeps it fully frozen and helps prevent ice crystals from forming.

Variations and Substitutions

  • Make s’mores ice cream. You’ve already got the marshmallows, so you can easily make this ice cream into a s’mores-inspired treat by mixing in crushed graham crackers and plenty of chocolate sauce.
  • Make fluffernutter ice cream. Simply swirl in some creamy peanut butter to create a fluffernutter-inspired ice cream.
  • Add nuts. Add a little bit of nutty crunch by mixing in some chopped pecans, walnuts, or peanuts.

Storage Instructions

Homemade toasted marshmallow ice cream can be stored in an airtight container in the freezer for up to 2 weeks.

What is the Taste of Toasted Marshmallows?

Marshmallows themselves have a sweet, sugary, buttery flavor. Toasting them adds a layer of nuttiness that offsets the sweetness every so slightly…in the best way!

Add that to a sweet and smooth ice cream base and you’ve got the most mouthwatering treat.

What Milk is Best for Making Ice Cream?

Sweetened condensed milk and heavy cream! These two ingredients are the key to the best ice cream texture. Lots of fat means lots of richness and creaminess.

Can You Freeze Marshmallows in Ice Cream?

Yes! Marshmallows are low in moisture, so they actually freeze really well in ice cream. Their texture remains light and airy even mixed into the frozen ice cream base.

FAQs

How to make toasted marshmallows? ›

It's easy to toast marshmallows without a campfire. Line up marshmallows on a baking sheet and broil in the oven until the tops are toasted golden brown. Remove the tray from the oven, turn over the marshmallows, return the tray to the oven and toast that side until golden brown.

How do you make soft and fluffy ice cream? ›

Sugar, corn syrup or honey, as well as gelatin and commercial stabilizers, can all keep your ice cream at a softer consistency. Ice cream also stays softer when you store it in a shallow container, rather than a deep tub, and cover the surface of the ice cream with plastic wrap to keep ice crystals from forming.

Why is my homemade ice cream so hard? ›

Similarly, too little sugar in ice cream can make it rock hard. Because sugar lowers the freezing point of the water in ice cream, the right amount will keep your ice cream from freezing completely – which is to say, leaves it scoopable instead of turning it into a brick of ice.

What to use for toasting marshmallows? ›

Look for roasting sticks that have sturdy tines and wooden handles and are made from stainless steel if you want something that's going to be sturdy. Those tend to hold up the best and not only will keep the marshmallow firmly in place while roasting, but will also enable you to remove it with ease once it's ready.

Can you microwave marshmallows? ›

You can also melt marshmallows in a microwave. Heat them in a large microwave-safe bowl with a couple of tablespoons of water. You'll need to check them every 10 seconds, stirring each time to ensure they melt evenly.

What is the secret to making ice cream very creamy? ›

Liquid sugars like invert sugar, corn syrup, honey, and glucose syrup all add body, creaminess, and stability to ice cream, and a little goes a long way.

Why is my homemade ice cream not creamy? ›

Like everyone else has already pointed out, it could be multiple things: Not enough fat, i.e. if you use milk in your recipe, you used too much milk and not enough cream. The more milk you use the more icy texture you get. Especially if you use skim milk.

How do you make homemade ice cream thick? ›

Adding thickening agents, such as egg yolks, cornstarch, gelatin, tapioca starch, or even Junket tablets, enhances the texture and elevates the overall ice cream experience. Remember, making homemade ice cream is as much an art as it is a science.

What is the best stabilizer for ice cream? ›

The most common ones used in ice creams are guar gum, cellulose gum and carob bean gum. They are used to reduce ice crystal growth, deliver flavour cleanly, increase smoothness, body and creaminess and slow down melting. They also help hold the air bubble structure together and give the ice cream a better texture.

Why is my ice cream hard after freezing? ›

The common cause for ice cream to harden in the freezer is a simple one – the temperature is just too low.

Why is everything in my freezer frozen but ice cream is soft? ›

Temperature Too Warm

If the freezer is freezing but your ice cream seems to soft, check the temperature setting is correct. The recommended setting for a freezer is 0°F (-18°C).

How do you make homemade ice cream freeze harder? ›

Adding a dash to your ice cream will definitely improve ice crystal formation, thickening and hardening. However, the real secret is fat content. Fat doesn't freeze, but water does. So, if your ice cream is mostly milk it has a relatively low fat content and will turn out much harder.

How do you make scoopable ice cream? ›

A higher fat content will cause an ice cream to be more scoop-able since fat freezes at a different temperature than water. If you reduce the amount of water and replace it with fat then you're more likely to have an ice cream that will be scoop-able at lower temperatures.

Can you toast marshmallows over stove? ›

You can use any type of heat stove, such as a gas stove, electric stove, or even a camping stove to roast marshmallows. Just make sure to use a heat-safe skewer or roasting stick.

Is it safe to roast marshmallows over a candle? ›

Use a lighter if you want them to taste like butane. A candle, however, is fine but you must be careful not to drop marshmallow into it. You don't want a fire. I want to use standard tealight candles outside to roast some marshmallows with the kids I nanny for.

Can you toast marshmallows in a toaster? ›

Place mini marshmallows and chocolate chips on a graham cracker. Set it on a toaster tray. Broil or toast until melted. Watch closely – they can burn fast!
